Low carb? Not me. I’m a high carb intake type 1 diabetic. Breakfast is usually a bowl of cereal and milk (not a small bowl, but a bowl that is about 1.5-2 serving sizes). I eat lots of pizza. Cheese and crackers are a fantastic snack (and easy to bolus if you are counting the […]

if you're a type 1, the insulin you take (either injected or via a pump) will help turn your carbs into glucose. but take a look at the american diabetes association website. it explains how when we eat a lot of carbs, our cells become "insulin resistant" and so our bodies make insulin, plenty of insulin, but it can't be used. our cells have "receptors" on their surfaces. hormones such as insulin are keys that unlock those receptors and allow glucose to enter into the cell. when those receptors are inundated all the time by leptin and insulin, they become immune or "resistant." so that means while you're eating lots of carbs and sugars, those carbs and sugars aren't reaching the cells, they build up in your body, get stored as fat. so while you're getting fat, your cells are actually starving because they're insulin resistant.

it is this cycle that is causing the obesity, heart disease, eye disease, sores, cancers, high blood pressure, etc.

carbs and sugars are toxins, but each person has to find what works for them in keeping his or her blood sugar levels near normal.

you might get away with eating lots of carbs and sugars for a while, but they are in fact, empty calories, and judging from health today, this is a major problem—probably the no. 1 health problem today.

I am a high carb lover too and luckily I found an option for my weakness. Joseph's Bakery is making diabetic friendly pita bread, which I absolutely love. I recommend it to you and to everyone else that have to be careful with carbs. http://www.josephsbakery.com/p-10287-Hig...

Perhaps you'd be better off with a teaspoon of these enormously or potentially high blood sugars: or not eating them at all. We all think we're going to live forever, but there is such a thing as being cautious and watchful about what we eat.
